I never thought once about my #1 dishes of the year would be enlivened by a TikTok pattern. Cook Peter Cho chose to do his own variant of the “wrap” video, where tortillas are partitioned into four quadrants, finished off with four unique fixings, collapsed on top of one another, and griddled. He utilizes a square of nori as his base, layering every quadrant with rice, strips of egg, and veggies like carrots and purple cabbage. Cho stuffs the focal point of the gimbal with tempura-seared nori for crunch. It’s presented with a misleadingly straightforward sauce of tamarind and French’s mustard.
